Most supermarket cinnamon is cassia, which contains coumarin — a compound that can affect the liver in large or sustained amounts. Ceylon cinnamon has far less. If you want it in a homemade treat, use a pinch of Ceylon cinnamon. What matters more is what else is in the recipe — baked goods often contain nutmeg, which is toxic to dogs, along with sugar, butter and sometimes raisins or chocolate.
